### Fusion Braised Chicken Legs
#### Ingredients:
- **8-9 chicken legs**
- **Salt and black pepper**, to taste
- **2 tablespoons butter**
- **2 tablespoons olive oil**
- **1 onion**, chopped
- **2-3 cloves garlic**, minced
- **4 tablespoons soy sauce**
- **1 tablespoon honey**
- **1 teaspoon paprika**
- **1/2 teaspoon curry powder**
- **1/4 teaspoon cocoa powder**
- **1 tablespoon apple cider vinegar or lemon juice**
- **250 ml (about 8.5 fl oz) chicken broth or water**
- **Fresh herbs** (cilantro or parsley), chopped, for garnish
#### Preparation:
1. **Marinate the Chicken:**
- In a bowl, whisk together soy sauce, honey, paprika, curry powder, and minced garlic. Season the chicken legs with salt and pepper, then immerse them in the marinade. For best results, refrigerate for 1 hour, or ideally overnight, to allow flavors to penetrate deeply.
#### Cooking Process:
2. **Brown the Chicken:**
- Heat butter and olive oil in a large skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and sear until golden brown, about 4 minutes per side. Remove and set aside.
3. **Sauté Vegetables:**
- In the same skillet, add onion and extra garlic. Cook over low heat until the onion is translucent. This step builds a flavor base by softening the vegetables and integrating the fond (browned bits) from the chicken.
4. **Deglaze the Pan:**
- Add a splash of chicken broth to the skillet and scrape the bottom with a wooden spoon to lift the caramelized bits, enriching the sauce with complex flavors.
5. **Compose the Sauce:**
- Pour the reserved marinade into the skillet along with the rest of the chicken broth, cocoa powder, and apple cider vinegar. Stir well and bring to a simmer. The cocoa adds a subtle depth, while the vinegar balances the richness of the sauce.
6. **Braise the Chicken:**
- Return the chicken legs to the skillet. Cover and let simmer for about 30 minutes, turning once halfway through to ensure even cooking and flavor absorption.
7. **Finish with Herbs:**
- Just before serving, garnish with fresh chopped cilantro or parsley to introduce a burst of freshness and color.
### To Serve:
Present the chicken legs alongside steamed rice or mashed potatoes, allowing the sauce to mingle with the sides for added flavor enhancement.
