# Mulled Wine
## Ingredients
- 1 bottle (750 ml) of red wine (Cabernet Sauvignon or Pinot Noir)
- 1 orange, sliced into rounds (plus more for garnish)
- 6-8 whole cloves
- 3 cinnamon sticks (plus more for garnish)
- 2 star anise
- 2-4 tablespoons sugar (adjust to taste)
- Optional: 1/4 cup brandy or rum
## Instructions
1. **Combine Ingredients**: In a large pot, combine the wine, sliced orange, cloves, cinnamon sticks, star anise, and sugar.
2. **Gentle Heat**: Heat the mixture over low to medium heat. Stir occasionally to dissolve the sugar. Avoid letting the mixture boil to prevent the loss of alcohol and to retain the wine's character.
3. **Simmer**: Once warm and steamy, reduce the heat to low and let it simmer for about 20-25 minutes. This allows the flavors of the spices and orange to infuse into the wine.
4. **Add Spirits (Optional)**: If using brandy or rum, add it towards the end of the simmering process to preserve its flavor and alcohol content.
5. **Taste and Adjust**: Taste the mulled wine and adjust the sweetness, if necessary. Add more sugar if you prefer it sweeter.
6. **Serve Warm**: Strain the mulled wine to remove the spices and orange slices. Serve warm in mugs or heat-resistant glasses. Garnish with a fresh orange slice and a cinnamon stick.
## Notes
- **Temperature Control**: Keeping the wine below boiling is crucial. Aim for a temperature where the wine is hot but not simmering too vigorously.
- **Flavor Infusion**: The longer the spices sit in the wine, the more pronounced their flavors will be. However, be cautious of over-steeping, as the spices can become overpowering.
- **Serving Size**: This recipe serves approximately 4-6 people.

# Scandinavian Glögg
## Ingredients
- 1 bottle (750 ml) robust Syrah
- 1/2 cup vodka or aquavit
- 1 orange, sliced into rounds
- 1/4 cup raisins
- 1/4 cup blanched almonds
- 6-8 green cardamom pods, lightly crushed
- 1-2 cinnamon sticks
- 4-6 whole cloves
- 1-2 star anise
- 2-3 slices of fresh ginger
- 1/2 cup sugar
## Instructions
1. **Combine Ingredients**: In a large pot, combine the Syrah, vodka or aquavit, orange slices, raisins, almonds, cardamom, cinnamon sticks, cloves, star anise, ginger, and sugar.
2. **Gentle Heat**: Warm the mixture over low heat. Stir occasionally to dissolve the sugar and to prevent the wine from boiling.
3. **Simmer**: Let the mixture simmer gently for about 45 minutes to an hour. This extended simmering time allows the spices and ginger to fully infuse their flavors into the wine.
4. **Serve Warm**: Strain the mixture to remove spices and solids. Serve warm in mugs, garnished with a fresh orange slice or a cinnamon stick.
## Notes
- **Alcohol Content**: The addition of vodka or aquavit increases the alcohol content, making it a more potent drink.
- **Spice Intensity**: Adjust the amount of ginger and cardamom to control the spice level.
