Fusion Braised Chicken Legs

Ingredients:

  • 8-9 chicken legs
  • Salt and black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 4 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cocoa powder
  • 1 tablespoon apple cider vinegar or lemon juice
  • 250 ml (about 8.5 fl oz) chicken broth or water
  • Fresh herbs (cilantro or parsley), chopped, for garnish

Preparation:

  1. Marinate the Chicken:
    • In a bowl, whisk together soy sauce, honey, paprika, curry powder, and minced garlic. Season the chicken legs with salt and pepper, then immerse them in the marinade. For best results, refrigerate for 1 hour, or ideally overnight, to allow flavors to penetrate deeply.

Cooking Process:

  1. Brown the Chicken:

    • Heat butter and olive oil in a large skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and sear until golden brown, about 4 minutes per side. Remove and set aside.
  2. Sauté Vegetables:

    • In the same skillet, add onion and extra garlic. Cook over low heat until the onion is translucent. This step builds a flavor base by softening the vegetables and integrating the fond (browned bits) from the chicken.
  3. Deglaze the Pan:

    • Add a splash of chicken broth to the skillet and scrape the bottom with a wooden spoon to lift the caramelized bits, enriching the sauce with complex flavors.
  4. Compose the Sauce:

    • Pour the reserved marinade into the skillet along with the rest of the chicken broth, cocoa powder, and apple cider vinegar. Stir well and bring to a simmer. The cocoa adds a subtle depth, while the vinegar balances the richness of the sauce.
  5. Braise the Chicken:

    • Return the chicken legs to the skillet. Cover and let simmer for about 30 minutes, turning once halfway through to ensure even cooking and flavor absorption.
  6. Finish with Herbs:

    • Just before serving, garnish with fresh chopped cilantro or parsley to introduce a burst of freshness and color.

To Serve:

Present the chicken legs alongside steamed rice or mashed potatoes, allowing the sauce to mingle with the sides for added flavor enhancement.
