Slow Cooker Caramelized Onions

Ingredients:

  • 3-4 lbs yellow onions (about 4-5 large onions)
  • 1/4 cup olive oil or melted butter
  • 1/2 tsp salt
  • Optional: 1 tbsp balsamic vinegar

Instructions:

  1. Slice onions thinly and evenly. A mandoline can be helpful for consistency.

  2. Place sliced onions in the slow cooker.

  3. Drizzle with olive oil or melted butter and sprinkle with salt. Toss to coat evenly.

  4. Cover and cook on LOW for 10-12 hours. Stir once or twice during cooking if possible, but it's not necessary.

  5. If onions are too liquidy after cooking, remove the lid and cook on HIGH for an additional 30-60 minutes to reduce liquid.

  6. Optional: Stir in balsamic vinegar for extra depth of flavor.

  7. Let cool and store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.

Notes:

  • This method yields about 2 cups of caramelized onions.
  • For a smaller batch, halve the recipe and use a smaller slow cooker.
  • Caramelized onions can be used in soups, on sandwiches, pizzas, or as a condiment.
