Slow Cooker Caramelized Onions
Ingredients:
- 3-4 lbs yellow onions (about 4-5 large onions)
- 1/4 cup olive oil or melted butter
- 1/2 tsp salt
- Optional: 1 tbsp balsamic vinegar
Instructions:
-
Slice onions thinly and evenly. A mandoline can be helpful for consistency.
-
Place sliced onions in the slow cooker.
-
Drizzle with olive oil or melted butter and sprinkle with salt. Toss to coat evenly.
-
Cover and cook on LOW for 10-12 hours. Stir once or twice during cooking if possible, but it's not necessary.
-
If onions are too liquidy after cooking, remove the lid and cook on HIGH for an additional 30-60 minutes to reduce liquid.
-
Optional: Stir in balsamic vinegar for extra depth of flavor.
-
Let cool and store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
Notes:
- This method yields about 2 cups of caramelized onions.
- For a smaller batch, halve the recipe and use a smaller slow cooker.
- Caramelized onions can be used in soups, on sandwiches, pizzas, or as a condiment.
