1. Traditional Ginger Candy (with Sugar or Starch Coating)

  • Ingredients:

    • Fresh ginger, peeled and sliced
    • Granulated sugar
    • Water
    • Optional: Additional sugar or cornstarch for coating
  • Instructions:

    1. Boil the Ginger: In a large pot, combine the ginger slices with enough water to cover them. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour until the ginger is tender.
    2. Drain the Ginger: Drain the ginger slices, reserving the liquid for another use if desired.
    3. Make the Syrup: In the same pot, combine equal parts sugar and water (about 1:1 ratio) and bring to a boil. Add the drained ginger slices.
    4. Candy the Ginger: Simmer the ginger in the sugar syrup for 1 to 1.5 hours until the ginger is translucent and the syrup thickens.
    5. Dry the Ginger: Remove the ginger slices with a slotted spoon and place them on a cooling rack or parchment-lined baking sheet to dry. Let them air dry for several hours or overnight.
    6. Coating Options:
      • Sugar Coating: Roll the dried ginger slices in granulated sugar for a sweet, crunchy finish.
      • Starch Coating: Lightly dust the dried ginger slices with cornstarch for a less sweet, dry finish.
    7. Storage: Store the ginger candy in an airtight container.

2. Honey-Ginger Candy (Traditional Flavor Profile)

  • Ingredients:

    • Fresh ginger, peeled and sliced
    • Honey
    • Water
    • Optional: Cinnamon stick, vanilla extract, or lemon zest (for flavor variation)
  • Instructions:

    1. Boil the Ginger: In a large pot, combine the ginger slices with enough water to cover them. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour until the ginger is tender.
    2. Drain the Ginger: Drain the ginger slices, reserving the liquid for another use if desired.

  • Ingredients:

    • 6 whole cloves
  • Instructions:

    1. Boil the Ginger: In a large pot, combine the ginger slices with enough water to cover them, along with the cinnamon sticks and whole cloves. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour until the ginger is tender.
    2. Drain the Ginger: Drain the ginger slices, reserving the spiced water.
    3. Make the Syrup: In the same pot, combine equal parts sugar and the reserved spiced water. Add the ginger slices back to the pot.
    4. Candy the Ginger: Simmer the ginger in the cinnamon-clove syrup for 1 to 1.5 hours until the ginger is translucent and the syrup thickens.
    5. Dry the Ginger: Remove the ginger slices with a slotted spoon and place them on a cooling rack or parchment-lined baking sheet to dry. Let them air dry for several hours or overnight.
