Buttermilk Oatmeal Muffins
Ingredients:
- 1 cup wheat flour
- 1 cup rolled oats
- 1/2 cup steel-cut oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk (for soaking oats)
- 2 eggs
- 1/4 cup honey
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Preparation:
- Soak the rolled and steel-cut oats in buttermilk for about 30 minutes.
- In a separate bowl, mix wheat flour, baking powder, baking soda, and salt.
- In a stand mixer, blend eggs, honey, oil, and vanilla until smooth.
- Add the soaked oats and dry ingredients to the egg mixture alternately, mixing until just combined.
- Fold in nuts and raisins.
- Spoon into muffin tins and bake at 375°F for about 20-25 minutes until a toothpick comes out clean.
