# Classic Spaghetti Carbonara Recipe
|

|
|
A simple yet delicious Italian pasta dish made with spaghetti, crispy pancetta, and a creamy egg sauce.
|
|
|
|
## Ingredients
|
|
|
|
- **400g Spaghetti**: Traditional Italian pasta.
|
|
- **150g Pancetta**: Diced into small cubes. Can substitute with bacon.
|
|
- **2 Large Eggs**: The base for the carbonara sauce.
|
|
- **1 Egg Yolk**: Adds extra richness to the sauce.
|
|
- **3/4 Cup Freshly Grated Parmesan Cheese**: For a nutty, salty flavor.
|
|
- **2 Cloves Garlic**: Minced, for added flavor.
|
|
- **Salt and Black Pepper**: To taste.
|
|
- **Fresh Parsley**: Chopped, for garnish.
|
|
- **Olive Oil**: For cooking the pancetta.
|
|
|
|
## Instructions
|
|
|
|
1. **Prepare the Pasta**
|
|
- Boil a large pot of salted water. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
|
|
|
|
2. **Cook the Pancetta**
|
|
- Heat a large skillet over medium heat. Add a little olive oil and the diced pancetta. Cook until crispy, about 3-4 minutes. Add minced garlic in the last minute. Remove from heat.
|
|
|
|
3. **Make Carbonara Sauce**
|
|
- In a mixing bowl, whisk together the eggs, egg yolk, and grated Parmesan cheese. Season with a pinch of salt and plenty of black pepper.
|
|
|
|
4. **Combine Pasta and Pancetta**
|
|
- Add the drained spaghetti to the skillet with pancetta. Toss well to coat in the pancetta's fat.
|
|
|
|
5. **Create the Carbonara**
|
|
- Remove the skillet from the heat. Quickly pour the egg and cheese mixture into the pasta, constantly tossing to combine. The residual heat will cook the eggs, creating a creamy sauce. Add a bit of reserved pasta water to reach your desired sauce consistency.
|
|
|
|
6. **Serve**
|
|
- Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
|
|
|
