Oatmeal Scotchies Recipe
A delightful oatmeal cookie with the rich flavor of butterscotch chips.
Servings
- Makes approximately 24 cookies
Ingredients
- 1 cup all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 cup (2 sticks) unsalted butter, room temperature
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups old-fashioned rolled oats
- 1 1/2 cups butterscotch chips
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Gradually add the flour mixture to the creamed mixture and mix well.
- Stir in the oats and butterscotch chips.
- Drop by rounded tablespoonfuls onto the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are golden brown. The centers should still be soft.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
