Roasted Asparagus with Lemon
This simple, elegant side dish will add color, nutrition, and a fresh flavor to complement your rich main course.
Ingredients:
- 1 pound fresh asparagus
- 2 tablespoons olive oil
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup grated Parmesan cheese
Instructions:

Prep (5 minutes):
- Preheat oven to 400°F (200°C).
- Wash asparagus and trim off the woody ends (about 1-2 inches from the bottom).

Season (2 minutes):
- Place asparagus on a baking sheet.
- Drizzle with olive oil and roll to coat evenly.
- Sprinkle with salt and pepper.

Roast (10-15 minutes):
- Roast in the preheated oven for 10-15 minutes, depending on the thickness of the spears.
- Asparagus is done when it's tender but still crisp.

Finish (2 minutes):
- Remove from oven and immediately sprinkle with lemon zest and drizzle with lemon juice.
- If using, sprinkle with Parmesan cheese.

Serve:
- Transfer to a serving platter and serve immediately.
Note:
This dish is best prepared just before serving to maintain the asparagus's crisp texture and bright color.
