Roasted Asparagus with Lemon

This simple, elegant side dish will add color, nutrition, and a fresh flavor to complement your rich main course.

Ingredients:

  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions:

  1. Prep (5 minutes):

    • Preheat oven to 400°F (200°C).
    • Wash asparagus and trim off the woody ends (about 1-2 inches from the bottom).
  2. Season (2 minutes):

    • Place asparagus on a baking sheet.
    • Drizzle with olive oil and roll to coat evenly.
    • Sprinkle with salt and pepper.
  3. Roast (10-15 minutes):

    • Roast in the preheated oven for 10-15 minutes, depending on the thickness of the spears.
    • Asparagus is done when it's tender but still crisp.
  4. Finish (2 minutes):

    • Remove from oven and immediately sprinkle with lemon zest and drizzle with lemon juice.
    • If using, sprinkle with Parmesan cheese.
  5. Serve:

    • Transfer to a serving platter and serve immediately.

Note:

This dish is best prepared just before serving to maintain the asparagus's crisp texture and bright color.
