Buttermilk Oatmeal Muffins

Ingredients:

  • 1 cup wheat flour
  • 1 cup rolled oats
  • 1/2 cup steel-cut oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk (for soaking oats)
  • 2 eggs
  • 1/4 cup honey
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Preparation:

  1. Soak the rolled and steel-cut oats in buttermilk for about 30 minutes.
  2. In a separate bowl, mix wheat flour, baking powder, baking soda, and salt.
  3. In a stand mixer, blend eggs, honey, oil, and vanilla until smooth.
  4. Add the soaked oats and dry ingredients to the egg mixture alternately, mixing until just combined.
  5. Fold in nuts and raisins.
  6. Spoon into muffin tins and bake at 375°F for about 20-25 minutes until a toothpick comes out clean.
