Classic Spaghetti Carbonara Recipe
A simple yet delicious Italian pasta dish made with spaghetti, crispy pancetta, and a creamy egg sauce.
Ingredients
- 400g Spaghetti: Traditional Italian pasta.
- 150g Pancetta: Diced into small cubes. Can substitute with bacon.
- 2 Large Eggs: The base for the carbonara sauce.
- 1 Egg Yolk: Adds extra richness to the sauce.
- 3/4 Cup Freshly Grated Parmesan Cheese: For a nutty, salty flavor.
- 2 Cloves Garlic: Minced, for added flavor.
- Salt and Black Pepper: To taste.
- Fresh Parsley: Chopped, for garnish.
- Olive Oil: For cooking the pancetta.
Instructions

Prepare the Pasta
- Boil a large pot of salted water. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Cook the Pancetta
- Heat a large skillet over medium heat. Add a little olive oil and the diced pancetta. Cook until crispy, about 3-4 minutes. Add minced garlic in the last minute. Remove from heat.

Make Carbonara Sauce
- In a mixing bowl, whisk together the eggs, egg yolk, and grated Parmesan cheese. Season with a pinch of salt and plenty of black pepper.

Combine Pasta and Pancetta
- Add the drained spaghetti to the skillet with pancetta. Toss well to coat in the pancetta's fat.

Create the Carbonara
- Remove the skillet from the heat. Quickly pour the egg and cheese mixture into the pasta, constantly tossing to combine. The residual heat will cook the eggs, creating a creamy sauce. Add a bit of reserved pasta water to reach your desired sauce consistency.

Serve
- Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
