# Creamy Leek and Potato Mash
|
|
|
|
This recipe elevates classic mashed potatoes with the mild, sweet flavor of leeks, creating a perfect accompaniment to your Balsamic Chicken with Caramelized Onions.
|
|
|
|
## Ingredients:
|
|
- 2 pounds russet potatoes, peeled and cut into 1-inch cubes
|
|
- 2 large leeks (white and light green parts only), thinly sliced
|
|
- 1/2 cup (1 stick) unsalted butter, divided
|
|
- 1/2 cup whole milk
|
|
- 1/4 cup heavy cream
|
|
- Salt to taste (start with 1 tsp)
|
|
- 1/4 tsp white pepper (or black pepper if white is unavailable)
|
|
- 2 tbsp olive oil
|
|
|
|
## Instructions:
|
|
|
|
1. Prep the vegetables (10 minutes):
|
|
- Peel and cube potatoes, place in cold water to prevent browning.
|
|
- Clean leeks thoroughly and slice thinly (white and light green parts only).
|
|
|
|
2. Cook potatoes (15-20 minutes):
|
|
- Place potato cubes in a large pot with cold water and 1 tsp salt.
|
|
- Bring to a boil, then reduce to a simmer and cook until fork-tender (about 15-20 minutes).
|
|
|
|
3. Cook leeks (10 minutes):
|
|
- While potatoes are cooking, heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.
|
|
- Add sliced leeks and a pinch of salt. Cook, stirring occasionally, until leeks are soft and slightly caramelized (about 10 minutes).
|
|
|
|
4. Warm dairy (2 minutes):
|
|
- In a small saucepan, warm remaining butter, milk, and cream over low heat until butter is melted.
|
|
|
|
5. Mash potatoes (5 minutes):
|
|
- Drain cooked potatoes and return to the pot over low heat.
|
|
- Shake gently for 30 seconds to remove excess moisture.
|
|
- Begin mashing potatoes, gradually adding the warm butter-milk mixture.
|
|
|
|
6. Combine and finish (2 minutes):
|
|
- Gently fold in the cooked leeks.
|
|
- Season with salt and white pepper to taste.
|
|
- If needed, add more warm milk to reach desired consistency.
|
|
|
|
## Notes:

|
- Be sure to clean leeks thoroughly, as they can often harbor dirt between their layers.
|
|
- For a smoother texture, you can puree the cooked leeks before folding them into the potatoes.
|
|
- This dish can be made ahead and reheated gently before serving.
