Papas y Huevos (Potatoes and Eggs)
Ingredients:

For the Potatoes:
- 4 medium potatoes (Yukon Gold or Russet), scrubbed clean (peel if desired)
- 3 tablespoons olive oil or vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1 teaspoon paprika, 1/2 teaspoon garlic powder, fresh herbs like rosemary or thyme

- 4 large eggs
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
- Optional: shredded cheese, chopped herbs (parsley, chives), hot sauce

- Fresh herbs: Chives, cilantro, parsley, or thyme
