Peanut Butter Banana Date Breakfast Bars

Ingredients:

  • 2 cups rolled oats
  • 1 cup dates, pitted and chopped
  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup (optional for extra sweetness)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional add-ins: chocolate chips, chopped nuts, dried fruit

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.

  2. Prepare the Dates: In a small bowl, soak the chopped dates in warm water for about 10 minutes to soften them, then drain.

  3. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, peanut butter, honey or maple syrup (if using), and vanilla extract. Stir until well mixed.

  4. Add Dry Ingredients: Add the oats, softened dates, cinnamon, and salt to the wet mixture. Stir until all ingredients are fully incorporated. If using optional add-ins like chocolate chips or nuts, fold them in now.

  5. Transfer to Pan: Spread the mixture evenly in the prepared baking pan, pressing it down firmly with a spatula.

  6. Bake: Bake for 25-30 minutes, or until the edges are golden and the center is set.

  7. Cool and Slice: Allow the bars to cool completely in the pan before slicing into squares or bars.

  8. Store: Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for up to 10 days.

These bars are chewy, flavorful, and packed with nutrients, making them an excellent choice for a quick breakfast on the go!
