### Peanut Butter Banana Date Breakfast Bars

#### **Ingredients:**
|
|
- 2 cups rolled oats
|
|
- 1 cup dates, pitted and chopped
|
|
- 2 ripe bananas, mashed
|
|
- 1/2 cup peanut butter
|
|
- 1/4 cup honey or maple syrup (optional for extra sweetness)
|
|
- 1/2 teaspoon cinnamon
|
|
- 1/4 teaspoon salt
|
|
- 1 teaspoon vanilla extract
|
|
- Optional add-ins: chocolate chips, chopped nuts, dried fruit
|
|

#### **Instructions:**

1. **Preheat the Oven**: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
|
|
|
|
2. **Prepare the Dates**: In a small bowl, soak the chopped dates in warm water for about 10 minutes to soften them, then drain.
|
|
|
|
3. **Mix Wet Ingredients**: In a large bowl, combine the mashed bananas, peanut butter, honey or maple syrup (if using), and vanilla extract. Stir until well mixed.
|
|
|
|
4. **Add Dry Ingredients**: Add the oats, softened dates, cinnamon, and salt to the wet mixture. Stir until all ingredients are fully incorporated. If using optional add-ins like chocolate chips or nuts, fold them in now.

|
|
5. **Transfer to Pan**: Spread the mixture evenly in the prepared baking pan, pressing it down firmly with a spatula.
|
|
|
|
6. **Bake**: Bake for 25-30 minutes, or until the edges are golden and the center is set.
|
|
|
|
7. **Cool and Slice**: Allow the bars to cool completely in the pan before slicing into squares or bars.
|
|
|
|
8. **Store**: Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for up to 10 days.
|
|
|
|
These bars are chewy, flavorful, and packed with nutrients, making them an excellent choice for a quick breakfast on the go! |
